

Red wine from France, Appellation Ventoux Controlée
This wine sums up the philosophy of the estate, 20 years of work and restructuring of the vineyard. Put the right grape variety on the right soil, work in an ecological way, create harmony between the soil, the plant and its environment while keeping the objective of producing wines of a typical character specific to this magnificent place.
Terroir : The Fondrèche plateau made from ancient alluvium, it is a very stony soil (rolled pebbles, flint and crystalline) limestone from the surface with a clayey-sandy texture. < / p>
Grape varieties : 50% Grenache, 30% Syrah, 20% Mourvèdre for an average age of the vines of around forty years
Vinification & aging : Traditional, vatting from 21 to 28 days with only a few small punching downs in order to promote slow and progressive extraction. Aging in ovoid vats, barrels and casks. Bottling in fruit day.
Tasting : A deep color, an intense nose of red fruit, black cherry, blueberry, raspberry, violet and woody spices. A generous, harmonious, round and silky palate. A wine to “bite into”.
Food and wine pairing : A doe navarin, a duck with thyme, an entrecote with pepper sauce, a poultry
