TERROIR :
A great geological diversity, a climate influenced by the relief of the Mediterranean, the vineyards offer a mosaic of terroirs and microclimates.
VINIFICATION:
Crushing and destemming of the grapes, short cold pre-fermentation maceration. Strict temperature control throughout the fermentation process (between 25° & 28° C). Extraction is done gently by punching down the cap, part of the harvest is matured in barrels to finalize the blend.
TASTING NOTES:
Color: Dark red with copper highlights.
Nose: Liquorice and spicy scents on a background of jammy berries.
Palate: Generous, concentrated, and carried by a silky and intensely fruity material.
GOURMET SUGGESTIONS: Tapas, grilled meats, lamb, roast pork, cheese platter.
